https://apps.apple.com/gb/app/muse-dive-into-big-ideas/id1501563902 this is the link on the Mac app store but you can find the iPad version from there...the main complaint is it is pricey (and Apple sherlocked it somewhat with freeform) but if you like outlining on paper or whiteboard nothing beats Muse... fascinated to hear what you think of it... I was also going to mention Ulysses but it is hardly obscure but it does typify what 21st C writing apps should be like
Feyn is a pretty cool handwritten flashcard app (I especially recommend it if you're a student)
PDF Expert is my Swiss Army knife (not exactly little known). Microsoft To Do is replacing Things for me also.
I used to use Microsoft To Do on my old mac, and I loved it. I might write a post about the iPad version

This seems like a pretty cool app—these sorts of unlimited-canvas-diagramy apps are super helpful when brainstorming.
It does seem a little pricy, but the reviews look promising.
Widgy!
I took a look at the App Store page, and wow—This app looks INCREDIBLE.

Muse!
Just a quick question—I’m seeing multiple apps called “Muse” on the App Store. Which one are you referring to?

The flip clock apps! [If you're someone who has problems focusing and need a cool digital clock on your table]
Woah, I didn’t even know they had iPad apps. I used to use them on my old MacBook
